They would defend any town or village that supplied them with ingredients. The restaurant is more famous for its warrior waitresses than for its food, although the chefs strive to earn some recognition for the restaurant's fame... If you know how to boil an egg, you're already qualified to be a chef, but if you want to clean the place or be a promoter, you have to be able to keep up with the waitresses. Many high-ranking adventurers work cleaning tables in the restaurant, as many customers can't handle their dish of “mutant primeval slug eats demons with butter,” and if they let it go, it could be a problem
You already have to defeat the waitstaff to get inside though. If the waitstaff can defeat the food, then that should not be an issue. Unless some low level adventurer is sitting near some high ranked adventurers and the "special of the day" gets out of hand.

If this is the same universe the Waitress Hunter is in, the waitstaff will be levelling up the same as the customers. That would result in interesting stories, from trying to defeat high level waitresses, all the way up to all of the high level waitstaff needing to defend the city as all of the adventurers are out of town dealing with another threat.
